  1. 1⃣️Wash the sauerkraut, mainly for hygiene reasons. Some sauerkraut is particularly sour, which will affect the taste. After washing, gently squeeze the sauerkraut to avoid too much water💕

  2. 2⃣️Cut the washed sauerkraut into shreds and set aside. You don’t need to cut it very finely, otherwise it will be stewed very rotten and lose the taste

  3. 3⃣️Soak the vermicelli in warm water, which will make it easier to stew and more hygienic💕

  4. 4⃣️Cut the green onions into sections, slice the ginger, and prepare them together with the star anise💕

  5. 5⃣️Choose fat or lean meat, or a little fatter is fine, because lean meat is more nutritious, so I choose fat and lean meat 💕

  6. 6⃣️Put a little oil in the pot, heat it and add the meat slices and stir-fry💕

  7. 7⃣️Let the onions, ginger and star anise add flavor to the meat. Fry the onions until soft and then add two spoons of light soy sauce. Remember to use light soy sauce and not soy sauce, otherwise the color will be very dark💕

  8. 8⃣️Add the sauerkraut into the pot and stir-fry for three to four minutes💕

  9. 9⃣️After the sauerkraut is almost fried, you can add salt. Depending on the amount of vegetables and soup, I added a spoonful and a half of salt💕

  10. 🔟Then add warm water until the sauerkraut is submerged and add more, because it will take a while to stew, and the vermicelli will need to be added after a while. The vermicelli loves the soup💕

  11. After boiling the warm water, reduce to low heat🔥 and simmer for another 10 minutes. The longer the simmering of the sauerkraut becomes, the better the soup will taste💕

  12. In the last step of making, add the soaked vermicelli and simmer for 10 minutes💥 and it’s ready💕

  13. Remember not to turn the pot when simmering vermicelli, otherwise the vermicelli will easily stick to the bottom of the pot. Stew the vermicelli until soft. You can taste the softness and hardness. If you like soup, keep more soup. Take it out of the pot.
