Overview
Salty and sour rice is a unique rice dish in Xianju. For Xianju people born in the 1970s and 1980s, like salty and sour porridge, it is also a meal that best evokes nostalgia and memories in the gastrointestinal tract. In addition to the salty and sour porridge eaten during the first half of the first lunar month, the Xianju diet also includes salty and sour rice eaten daily. Salty and sour rice is a kind of salty rice served with whole grains and vegetables. Just like its other name, salty mixed rice, its main feature is that it can be mixed with sweet potatoes, potatoes, taro, green beans, choy sum, pumpkin, dried mustard and other whole grains and seasonal vegetables as condiments to create various flavors. Most of the farmhouse salty and sour rice is stewed in large iron pots on earth stoves. The stewed salty and sour rice is rich in aroma, salty and delicious. There are no other dishes. Eaters often eat more and praise it. A few days ago, I made an appointment with my friends to go to the countryside for leisure. We agreed to eat authentic farmhouse salty and sour rice. It used bacon marinated in native pork and dishes grown by the farmers. We cooked a large pot of it in a large iron pot on the earthen stove and ate it for 17 people.
