Candy Apple Cocoa Madeleines
Overview
Since receiving the Dongling DLK30A, I have handed over all the baking work at home to it. I had a weekend off today and made madeleines after lighting the mold. I still had a lot of candied apple pieces made with the Dongling bread machine last time, so I just added them to the madeleines. The texture of the finished product is indeed very special

Ingredients
Steps
-
Mix cocoa powder, baking powder and cake flour together and sift 2 times
-
Crack the eggs into a clean large bowl and pour in the fine sugar
-
Use a hand mixer to mix evenly, no need to beat
-
Pour the milk and vanilla extract into the egg mixture and stir evenly
-
Pour the mixed powder into the egg liquid and mix evenly. Do not mix evenly in the same direction, as it will cause gluten to affect the taste
-
The mixed batter is a bit thick
-
Pour the melted butter into the cocoa batter
-
Mix well with a silicone spatula
-
Put the piping bag into the cup, pour the cocoa batter, tie the bag tightly and put it in the refrigerator for about 1 hour
-
After an hour, take it out to room temperature and leave it for about 10 minutes
-
Just cut a hole and squeeze it into the prepared mold. I used a non-stick mold, so I didn’t apply oil. Dongling electronic oven started to preheat by turning on the 07 cookie button. The temperature was set to 185 degrees for the upper tube and 160 degrees for the lower tube
-
Add candied apple pieces
-
After the oven is preheated, place it in the middle rack and bake for about 14 minutes
