Appropriate amount of winter squash.

Remove the flesh.

Cut into thin slices.

Heat an appropriate amount of oil in a pot, stir-fry onions, garlic, pepper, and chili until fragrant.

Add the pumpkin slices.

Stir fry twice and add a spoonful of boiling water.

Season with appropriate amounts of salt, vinegar, and light soy sauce.

Stir-fry a few times, turn off the heat and serve. Winter squash is delicious when it is crisp and tender. It is not advisable to over-fry.
