Heat oil in a pan and fry the poached eggs (I fried two).

Prepare soul sauce: add salt, light soy sauce, dark soy sauce, oyster sauce, balsamic vinegar, white sugar and appropriate amount of water.

Heat another pot of oil.

Sauté minced onion, ginger and millet pepper rings.

Pour in the soul sauce.

When the pot comes to a boil, add the fried poached eggs.

Add fresh noodles and simmer until the soup dries up.
