It is a must-have dish on the dining table in the Chaoshan area of Guangdong every New Year. It was something I didn’t usually eat when I was a kid. Now I can get it whenever I want and have time. It’s very delicious. My daughter loves to eat very much.

I forgot to take a photo earlier, so just cut the shrimp into 3 pieces. Cut the fat evenly and cut it into small cubes. Chop the water chestnuts and don’t chop them too much, so that they have a crispy texture.

Cut them all into one piece and mix them with flour and 2 egg whites. No water is added in the whole process. You also need to chop some green onion into it. Stir until it is sticky and spread it flat on the bean curd skin. Roll it into a long strip and roll it in a circle. Use a knife to cut the bean curd skin. Then one strip is rolled. And so on. Roll all the pieces and cut them into balls.
