Soft fried whitebait
Overview
Silverbait is small, as white as silver, scaleless and completely transparent. Whitebait is a fish that is extremely rich in calcium, high in protein, and low in fat. It has basically no spines and is very suitable for children and the elderly.

Wash and dry the whitebait with water and set aside

Add cooking wine, salt and mix well to taste

Make a batter. Add an appropriate amount of baking powder to the flour and starch and stir evenly (the ratio of flour to starch is 7:3). Add water to make it. Add a few drops of cooking oil to the batter before use

Squeeze out the water from the whitebait before hanging it in paste

Then coat the whitebait with a layer of prepared batter

Add more oil to the pot. When the oil is hot, add the whitebait one by one

Fry until golden brown, remove and drain the oil

Put it on a plate and sprinkle with pepper and salt. I didn’t sprinkle with pepper and salt. I like to eat it plain and it’s delicious
