Fried rice with chives and eggs
Overview
Basically every time there is leftover rice, it is fried and eaten the next morning. This time it’s my classic chive and egg fried rice.

Prepare ingredients.

Crack the eggs into a bowl, add a small amount of salt and mix well; cut the scallions into finely chopped pieces.

Heat oil in a pan, pour in the egg liquid and fry.

Crack the eggs with a spatula, then add the rice and stir-fry.

Fry the rice until hot and then add appropriate amount of salt, soy sauce and oyster sauce to taste.

Finally sprinkle with chopped green onions and turn off the heat.
