Remove the scales from the fish, drain the water, add salt and marinate in rice wine for 10 minutes. Place ginger slices under the fish.

Cut green onions into sections. Slice ginger and garlic and set aside.

After the water in the steamer boils, put the fish in and steam over high heat for 8 minutes. Turn off the heat without opening the lid and steam for another 3 minutes.

Take a small pot and pour some oil into it and heat it up.

Remove the fish and carefully pour off the juice from the dish.

Spread onions and garlic, pour steamed fish with soy sauce, and pour the smoking oil over the fish.
