When I was a kid, I would have this dish every Chinese New Year. I still have to go to work, so I can fly back to my parents at the age of twenty-nine and become an improved version

Cut the meat into cubes, depending on your preference. Put the fat meat in a separate pile, and put the lean meat and a small amount of fat and lean meat in an alternating pile

A handful of Sichuan peppercorns for later use

Add less oil to a cold pan and fry the fatty meat over low heat

Fry the fatty meat until golden brown

Put the diced meat into the pot, stir-fry over medium heat until it changes color, remove from the pot and set aside

Prepare a portion of starch and later prepare it into water starch for thickening

Heat oil, add dry seasonings: dried chili pepper, star anise, Sichuan peppercorns, saute until fragrant

Add onion, ginger and garlic and sauté until fragrant

Pour in the diced meat, stir-fry over high heat, add seasonings, add water and starch to thicken before serving

With rice, you can consider making the meat smaller and eating it directly with rice
