  1. Wash and cut the duck meat into pieces, stir-fry in a white pot and remove, rinse with clean water and set aside.

  2. Slice the ginger and chop the salty lemon. The salted lemons I use are lemons that I soaked in salt water for two years. The longer the salty lemon is brewed, the better it tastes.

  3. Put ginger slices, star anise and cinnamon into a pot and stir-fry until the water is dry. Add oil and sauté until fragrant.

  4. Pour the duck meat into the pot and stir-fry evenly. Add the cooking wine, fermented bean curd, oyster sauce, soy sauce, sugar and stir-fry evenly. Add the salted lemon and stir-fry evenly. Cover the pot and simmer over low heat for twenty minutes. Stir-fry halfway through to let the duck meat evenly absorb the flavor.

  5. After 20 minutes, taste test, turn off the heat, add the green onions and cook.
