Toon Tofu
Overview
[Chinese toon tofu] A side dish that must be eaten in spring. It has been many days since I made this dish, but I have been busy and haven’t sorted it out. In the past, there was a saying that eating Chinese toon was the most beautiful before and after Grain Rain, but now it seems that I can’t wait for Grain Rain, and it will be a bit old during the Qingming Festival. I didn't wait until my mother went back to her hometown to make some, so she bought some first, scrambled eggs, mixed with tofu, and tasted them first. Hehe, after my mother got home and got it, I had to think of ways to store the large amount of toon. I used three methods this year, give it a try and see which one is better. One is to blanch and then freeze, the other is to blanch and then chop and mix with salt, the third is to blanch and then mix with salt and a lot of oil, it will take a while to see which one is better. Share when the time comes. Toon mixed with tofu is a very refreshing way to eat. I prefer this to scrambled eggs and toon.

Cut the tofu into small pieces.
