Shred lettuce and carrots. Put the lettuce in a bowl, add a little salt, mix well and marinate for 5 minutes.

Boil the vermicelli in boiling water, take it out and soak it in cold water.

Drain the water from the vermicelli, add shredded carrots, squeeze out excess water from the shredded lettuce and put it on top. Shred the green onions and place on top of the dish.

Heat some hot oil and pour it on the green onions.

Add salt, a little light soy sauce, white vinegar (I don’t have any white vinegar at home, and the aged vinegar I added is a bit darker), sugar, sesame oil and peppercorn oil (you can add more peppercorn oil for more flavor). If you like it spicy, add chili oil and mix well.
