Fried red fruits
Overview
I would like to recommend an appetizer to relieve fatigue - traditional fried red fruits from old Beijing. Crystal clear, sour and sweet, it can digest food, whet the appetite, and remove accumulation. It also plays a certain role in detoxifying and reducing phlegm, refreshing the mind and refreshing the brain.

Steps
-
Prepare the ingredients, 600 grams of red fruits and 300 grams of white sugar. The ratio of red fruits and sugar is 1:0.5.
-
Soak the hawthorn in light salt water for a while and clean it.
-
Use a corer to make a mark on one end of the hawthorn flower stem, preferably to the location of the hawthorn core. (If you don’t have a corer, you can also use a thicker straw or pen cap)
-
Then insert one end of the corer into it again, so that you can easily remove the core inside. In this way, the core will be removed very cleanly.
-
Remove all cores and set aside. After removing the hawthorn core, we weighed it and found it weighed about 600 grams.
-
Put half a bowl of water in a boiling pot, add the pitted red fruits, add about one-third of the white sugar, and cook over medium-low heat. During the cooking process, gently shake the pot and try not to stir with a spoon to prevent the red fruits from being broken.
-
Cook until the sugar melts and the water boils. Add the white sugar for the second time and continue to simmer over low heat. Try not to stir with a spoon during the entire cooking process to avoid damaging the shape of the red fruits.
-
Cook until the sugar melts and add white sugar in batches until all 300 grams of sugar have been added. Add white sugar in batches so that the sweetness of the sugar can penetrate into the red fruits, and the fried red fruits will be sour and sweet with a consistent taste.
-
After all the sugar is added, continue to simmer over low heat until the red fruits are slightly transparent and the soup is thick, then turn off the heat. (It takes about ten minutes)
-
Finished product! Pour the cooked red fruits into a crisper and store them in the refrigerator. There is no problem in storing them for a week. The red fruits cooked in this way will have a QQ taste after being cooled, and the soup will also be jelly-like.
