Two pieces of Spanish mackerel should be washed very clean, remove the blood, cut into sections, and put on a plate for later use.

Ingredients: cooking wine, oyster sauce, light soy sauce, mature vinegar, thirteen spices, green onions, ginger, garlic, coriander, and dried red chili peppers.

Drain the water from the fish as much as possible, put a spoonful of oil in the pan, heat the oil to 80% and start frying the fish. Fry the fish skin first until it becomes golden brown, which can remove the fishy smell and enhance the flavor.

When the fish is fried, add appropriate amount of cooking wine

Add an appropriate amount of oyster sauce, 2 tablespoons of vinegar, 3 tablespoons of soy sauce, and appropriate amount of thirteen spices. Stir-fry for 1 minute to allow the oyster sauce and soy sauce to color evenly.

Add ginger slices, green onion slices, garlic slices, and 3 small pieces of dried chili pepper, stir-fry

Add appropriate amount of water, cover, simmer over medium heat until only a small amount of soup remains, about 15 to 25 minutes, depending on the amount of water added.

Add coriander segments before serving, toss and serve.
