Spicy clams
Overview
Spring and summer are the most beautiful seasons for eating clams. The clams are big, fat, and the meat is delicious. They are quite enjoyable to eat. Usually clams are usually fried, but roasted with chopped peppers and a lot of garlic is also quite delicious. It is spicy with garlic and has the delicious taste of the clam itself. It is even more delicious when paired with a glass of beer. After eating the clams, the enoki mushrooms below have absorbed the clams' soup, which makes it more spicy and fresh. It is also excellent with rice.

For this dish, mince more garlic and mince the ginger.

Cut off the ends of the enoki mushrooms and clean them.

Take 2 tablespoons of chopped pepper and chop 5 millet peppers.

Take a container of the pizza pan I used, line it with tin foil, and spread the enoki mushrooms on top.

Heat the wok, add more vegetable oil, add minced garlic and ginger and stir-fry until fragrant, then add chopped pepper, millet pepper, light soy sauce, oyster sauce, cooking wine, and white pepper and continue stir-frying for a while, set aside.

Put the clams under boiling water and cook for about a minute. As soon as you see a few clams that have just opened their mouths, take them out. If there are some clams that have not fully opened, just break them open with your hands. Don't cook them for too long.

Arrange clams evenly on top of enoki mushrooms.

Pour the fried seasoning and soup onto the clams with a small spoon.

Preheat the oven to 190 degrees and bake on the middle rack for about 8 to 10 minutes.
