Overview
Yuba is a traditional food that Chinese people love very much. It has a strong bean flavor and a unique taste that other soy products do not have. Beancurd stick is yellow-white in color, shiny and translucent, and is rich in protein and various nutrients.

Soak the dried yuba in cold water for 12 hours, cut into strips and blanch in water for later use.

After washing all the ingredients, soak them in light salt water for 15 minutes

Cut the soaked ingredients into small pieces: cut the celery stems into small pieces, slice the garlic, shred the green onions, cut off the coriander, and cut the rest into granules. Chop the ginger and garlic into mince, add appropriate amount of cold boiled water and a small amount of salt and soak for 1 hour. Add half a spoonful of oil and two spoons of red oil, stir well and set aside.

Separately put the chopped celery, garlic slices, green peppers, red peppers, green onions, shallots, peppercorns and blanched yuba into a large bowl. Heat an appropriate amount of rapeseed oil in a wok and pour it over the ingredients.

After the oil is poured in, add light soy sauce, MSG, sugar and prepared red oil ginger and garlic juice according to personal taste, mix well, and sprinkle with coriander.
