Overview
Fried dough sticks are our traditional food. They are crispy on the outside and taste no worse than the ones outside. Moreover, the ones we make at home are healthier and safer to eat than the ones outside.

Except for the eggs and oil, add all the dry powder and mix well.

Add eggs and beat well.

Add the cooking oil and mix well, then add 140 grams of water in small amounts several times (the total weight of water and eggs is about 180 grams, if the eggs are large, reduce the weight of water).

Start kneading the dough like this, cover it and let it rest for 10-15 minutes.

Knead into a smooth dough after 15 minutes.

Brush the dough with oil, put it in a plastic bag and refrigerate it for 8 hours. You can make it immediately when you wake up in the morning.

Take out the dough and let it rest for ten minutes, then roll it into a 1 cm thick piece without kneading it.

Cut into two finger-wide strips and touch every other strip with a little water.

Then stack the piece that is not wet on top of the piece that is wet, and press it with chopsticks in the middle. If the pot at home is not that big, cut it into pieces, cover it with plastic wrap and let it rise for 20 minutes.

Heat the oil in the pan until it is 60% hot. Pick up the two ends of the dough and pull it down into the oil pan. Fry until one side is golden brown and then flip it over.

Fry until both sides are golden brown, then take them out and the fried dough sticks are ready.
