Stir-fried smoked dried tofu with garlic leaves
Overview
Smoked dried tofu is made by putting dried white tofu in when curing fish and bacon on the winter solstice. It is smoked directly after being marinated. It has a particularly chewy texture.

Soak the dried beans in warm water for ten minutes.

Wash and cut into strips.

After the oil is hot in the pot, add ginger, garlic and dried chili segments and sauté until fragrant.

Add dried beans and stir-fry.

Add a little light soy sauce and stir-fry.

Add appropriate amount of water and simmer over low heat for three minutes.

Before removing from the pot, add garlic leaves and stir-fry until cooked.
