Braised Spicy Chicken Nuggets

Prepare ingredients: 2 large chicken legs, soak in water for 10 minutes and rinse with running water.

Put the washed chicken pieces into a pot of cold water and add cooking wine, green onions, peppers, Sichuan peppercorns, and ginger.

After the water boils, use a spoon to remove the scum on top, cook the chicken pieces for 10 minutes, take them out and set aside.

Blanched chicken pieces.

Prepare 30 red peppers, 20 Sichuan peppercorns, 3 star anise, one green onion, 5 garlic and one piece of ginger.

Cut green onions into slices, slice ginger, and slice garlic.

Pour oil into the pot, add sugar and stir until bubbles bubble.

Pour the chicken pieces in and stir-fry evenly. Add 1 spoon of dark soy sauce, 2 spoons of light soy sauce and a spoon of cooking wine and stir.

Add the chili, garlic, ginger, star anise, and scallions and stir-fry evenly.

Pour in boiling water and start to simmer the chicken pieces. When the water is half full, add salt and simmer for another 10 minutes. Add pepper and a little chicken essence.
