Prepare the main material: pig trotters. Wash, chop into small pieces, soak in clean water to remove part of the blood and wash. Add water to a pot and add cooking wine, ginger slices and peppercorns. After boiling, add the pig's trotters and boil for about 5 minutes. Skim off the scum and rinse with cold water and set aside. Prepare seasonings: star anise, cinnamon, kaempferol, amomum villosum, peppercorns, bay leaves, salt, sugar, cooking wine, white pepper, scallions, monosodium glutamate, soy sauce, cooking wine, vegetable oil

Put oil in the pot and heat until 50% hot

Add star anise, cinnamon, kaempferol, amomum villosum, peppercorns, ginger slices and scallions and stir-fry until fragrant;

Stir-fry until fragrant;

Add pork trotters and stir-fry

Add sugar, bay leaves, soy sauce and pepper and stir well, then add boiling water to cover the pig's trotters;

Place in a pressure cooker, bring to a boil over high heat and then turn off the heat after 25 minutes;
