Remove the fish and internal organs, wash and marinate with salt

After marinating for half an hour, add starch and water to make a paste and apply it on the surface of the fish. Deep-fry in oil until the surface is golden brown. Pour out most of the oil in the pot and put the fish in the pot. Heat water to cover the fish. Add onion, ginger, garlic, white sugar, salt, soy sauce and cooking wine. Bring to a boil over high heat. Reduce to low heat for fifteen minutes. Turn off the heat and simmer for ten minutes
