Clean the small yellow croaker and marinate it with salt for fifteen minutes.

The side dishes include green garlic, celery, onions, dried chili peppers, and ginger (forgot to take a photo).

Cut all ingredients and set aside.

Heat oil in a pan and fry the small yellow croaker. I used too much force when removing the gills and accidentally pulled off a small fish head.

Fry until golden brown on both sides, scoop up and set aside.

Heat oil in another pan and sauté ginger and dried chili until fragrant.

Add the side dishes, add appropriate amount of salt and stir-fry until soft.

Add the fried small yellow croaker and drizzle with soy sauce.

Stir well and remove from the pan.
