Eggplant sauce
Overview
I planted a few eggplants this year, and they are growing very well, and the eggplants they produce are big and tender. My husband likes to eat ketchup best, with a layer of green onions underneath, it goes great with rice. It’s super simple to make and only requires one seasoning.

Wash the eggplant and green onions

Control the moisture of the eggplant. If it is too big, cut it into pieces. Pour an appropriate amount of oil into the pot, add the eggplant, and fry slowly over low heat

Turn over frequently and don’t burn it

When cooked, pour off excess oil and add bean paste

Use chopsticks to cut the eggplant into thin strips and mix well with the bean paste

You can cut the green onions into shreds with a knife or tear them directly into shreds with your hands. Spread them flat on the bottom of the plate and scoop out the tomato sauce
