Pumpkin and Red Date Hair Cake

My colleague’s mother gave me a big pumpkin, and I wanted to make some soft and easy-to-digest steamed cakes for my grandma, so I excitedly rolled up my sleeves and started steaming it early in the morning

After the water boils, steam the chopped pumpkin until cooked (about 20 minutes)

Mash the pumpkin while it's hot and let it cool

Dissolve the yeast powder in warm water and set aside (I forgot to take a photo of this step)

Mix the white flour and the cooled pumpkin paste evenly, and add the yeast water (knead while adding). Each pumpkin has a different water content, so you need to adjust it little by little when adding flour. Pumpkin is very sweet so I didn’t add sugar.

Knead the dough into a smooth and soft ball, cover with plastic wrap and wait for fermentation

Wash the red dates and cook for 5 minutes, then core and cut into pieces. Boiled red dates can better distribute the aroma

When the dough has doubled in size, bring the steamer to a boil, soak a drawer cloth in water and twist it until it is slightly dry. Place it on the steamer. Pour the risen dough into the cloth and spread it out. Press it gently to flatten it. Add the cooked jujubes and wrap the dough loosely with the drawer cloth

Steam over high heat for 20 minutes, then turn to medium heat and steam for 20 minutes, then take it out of the pan and let it cool for a while
