Hairtail is one of the fishes with high nutritional value. One of the dishes that my baby loves to eat very much. It is a dish that is served very often in my family. It is simple to make and tastes great!

Wash the hairtail, add salt, cooking wine, soy sauce, green onion, and ginger in order and marinate for 15 minutes.

Pour oil into a cold pan (the oil is slightly wider than cooking oil), add Sichuan peppercorns, and fry over low heat.

Remove the peppercorns and add sugar (no need to fry the sugar, just for coloring).

Then add the hairtail and fry until browned on both sides. (Don’t throw away the marinated fish ingredients, they will be used later)

Cook cooking wine along the edge of the pot.

Cook in white vinegar.

Pour the previously marinated fish ingredients into the pot together (if you feel the taste is not enough, you can add a little more salt). My magic weapon - Laba garlic. Laba garlic tastes great when used with fish!

Pour in boiling water, the amount of water is equal to the fish, cover the pot, bring to a boil over high heat, then turn to low heat until the soup is thick and the juice should not be too dry.
