Wash the spinach and blanch it in a pot of boiling water until it changes color, drain and chop into pieces.

Put 30 grams of granulated sugar into the egg yolk bowl, stir with an egg beater until even and all the sugar is melted.

Add pure milk and mix well.

Add 35ml of corn oil in batches to blend the egg liquid and oil.

Sift the flour twice and pour it into a basin, stir evenly to form a ribbon-shaped egg yolk paste.

Add a few drops of lemon juice to the egg whites and beat on low speed until coarse foam forms.

Add 30 grams of fine sugar in three batches and beat at medium speed.

Beat until wet peaks, about 7 minutes in length.

Add 1/3 of the egg white to the egg yolk batter, add a little chopped spinach and mix evenly.

Pour back into the egg whites and mix quickly to combine.

Pour the batter into the mold, shake it a few times on the table to remove any bubbles and make the surface smooth.

After preheating the oven to 175°, place a rack on the middle shelf and bake for 25 minutes.

Add sugar to egg yolks and beat until light in color.

Add milk, vanilla essence, sift in cake flour and stir evenly.

When the cake is out of the oven, place it upside down on the grill and remove the parchment paper.
