Chop the chicken, add egg white, salt, and chicken essence, stir evenly, and let stand for 10 minutes. Slice green peppers, cut mushrooms into small slices, and mince green onions and ginger. Put the rapeseed into boiling water, add a small amount of salt, blanch it with a drop of cooking oil, take it out and set aside.
