Buy fresh tenderloin, freeze it, take it out and slice it when it is a little firm, otherwise it will be difficult to cut. The starch is mixed with water, not water starch. If you add too much water, grab the bottom layer and add it to the meat. Add a little salt and grab it with your hands. It should not be too thin. The meat will feel sticky. Each piece must be thickly wrapped with starch.

Cut carrots, ginger into shreds, and scallions into sections. Prepare the sweet and sour sauce, add sugar, vinegar, light soy sauce and a little salt in a small bowl. Taste as you mix and adjust to your favorite sweet and sour taste.

Add oil to the pan and fry the tenderloin twice. The first time it is cooked, the second time it is crispy. Take it out, add onions and ginger and saute until fragrant, add carrots and stir-fry, add sweet and sour sauce, then add fried meat, stir-fry together, you can taste it during the process, and you can add if it is insufficient.
