Prepare the ingredients: Southern bitter gourd, cut into thin semi-circular slices, cut the meat into thin strips, mince the onion, ginger and garlic, cut the black fungus into small pieces.

Add light soy sauce, salt, rice wine, and ginger to the shredded pork and marinate it for about 30 minutes. Then add a little starch and a little blended oil.

Pour oil into the wok, add minced onion, ginger and garlic, stir-fry until fragrant, then add shredded pork, stir-fry, the shredded pork will not stick to the pan because of the oil added.

Stir-fry the shredded pork until it turns white, add black fungus and bitter melon slices and continue to stir-fry until the bitter melon changes color, then cover the pot and simmer for two minutes without adding water.
