Dried Beef, Shrimp and Seaweed Soup
Overview
Seaweed is a tasteless thing, but it is refreshing. When paired with beef and dried shrimp, the whole soup comes alive.

Dried shrimps overnight;

Do not throw away the water in which the dried shrimps have been soaked. It will be used to make soup later. Put the pot on the stove, add the water in which the dried shrimps have been soaked, and add about 2 cups of water. Over medium-low heat, tear the dried shrimps into pieces and leave one for slices. If you do not want to slice them, please tear them all into pieces. This will better release the flavor. Boil the water until the dried shrimps are out of flavor;

Soak the seaweed, wash and drain;

Marinate beef with 1 tbsp light soy sauce, 1/4 tsp sugar, 1/4 tsp pepper, 1 tsp cooking wine and 1/2 tsp cornstarch;

Go back and simmer the shrimp soup until it turns white;

Pour in the seaweed; stir slightly with a spoon and cook for 6-8 minutes;

Pour in the beef, do not pour it in one lump, but disperse it into the soup, taste it, add about 2/3 teaspoon of refined salt, sprinkle with 1/2 teaspoon of pepper, and boil for about 2 minutes;

Turn off the heat, sprinkle in the chopped green onions, then add 1 teaspoon of sesame oil, and serve.
