This is the pig skin left over from killing the New Year pig at home. I braised the pig trotters together and froze them in the refrigerator. I need to take them out in advance and defrost them, and blanch the pig skin with onion, ginger and cooking wine. You don’t need to blanch the pork skin rolls you buy outside.

The soybeans you soaked yourself can be used like this. You can also buy soaked ones in the market.

Use tweezers to remove any remaining hair from the pig skin, rinse and cut into strips.
