Enoki Mushrooms in Tomato Sauce

Wash the enoki mushrooms and remove the bottom. Chop green and red peppers and mince garlic.

Add an appropriate amount of cooking oil to the pot. When the oil is hot, add minced garlic and stir-fry until fragrant.

Add tomato paste and stir-fry until red oil comes out.

Pour in appropriate amount of hot water.

Put the enoki mushrooms into the pot and bring to a boil, then start seasoning, add salt, sugar and chicken essence.

Place the cooked enoki mushrooms into a bowl.

Place the green and red peppers on top of the enoki mushrooms.

Change to a clean wok and pour an appropriate amount of cooking oil into the pot. When the oil is 60 to 70% hot, turn off the heat and pour the oil on top of the peppers.
