Crack the whole eggs and egg yolks into a bowl.

Weigh the flour and baking powder and mix together.

Weigh the granulated sugar.

Beat the eggs with a mixer on low speed until foamy.

Add one-third of the caster sugar.

Turn to medium and beat until the egg batter starts to become thick.

Add one-third of the caster sugar the second time.

Whip the egg batter until there are no air bubbles and it begins to have slight texture. Add the remaining one-third of the caster sugar.

Whisk until the texture is clear. Lift the whisk and the dripping egg batter will not disappear immediately.

Sift in the mixed flour.

Gently stir to combine.

Put a 1cm diameter round nozzle in a piping bag, put it in a larger and deeper cup, and fill it with the mixed egg batter.

Spread evenly on a baking sheet lined with greaseproof paper, leaving a gap in the middle.

Put it in the preheated oven at 170 degrees, turn on low heat, and bake on the middle rack for about 10 minutes until it starts to color.
