Prepare the ingredients in the picture, bitter melon, green onions, dried shrimps, and forelegs

Wash the front leg meat and cut it into small pieces, then add a little salt, appropriate amount of light soy sauce, oyster sauce, cornstarch, chicken powder, and peanut oil. Chop it into meat sauce and put it into a basin

Soak the dried shrimps in water for ten minutes and then chop into small pieces. Chop the green onion into fine pieces

Put the dried shrimps and scallions into the bowl of meat sauce, and then use chopsticks to mix evenly in the same direction. If the meat sauce is too dry at this step, add a little water

Cut the bitter melon into sections of about 4cm, then use a paring knife to cut into pointed shapes

Boil water in a pot, add an appropriate amount of salt and a spoonful of peanut oil, add bitter melon and cook for three to four minutes, remove and rinse with cold water twice
