Appetizers & Party Food-Salmon Cakes

Overview

This dish uses Atlantic salmon sourced from the west coast of Canada. Since salmon meat itself is relatively thick, custard sauce is used to increase the smoothness of the patties. It tastes quite delicious. This form of cooking is a great snack for banquets. The raw meatloaf can be vacuum-frozen and stored in advance, and can be thawed overnight in the freezer before use. Endless cooked meatloaf is also suitable for freezing and does not require vacuum preservation. Raw salmon should be stored in a vacuum as much as possible to prevent nutrient loss caused by oxidation of fish oil and the subsequent fishy smell.

Steps

  1. The fish is simply salted and marinated with garlic powder for 10 minutes, then placed in a pan and fried until cooked for 8 minutes (medium heat, 2 minutes per side, fish meat thickness 3 cm)

  2. Due to the addition of garlic powder, the sugar contained in the garlic powder will easily color the fish, so it is not advisable to fry it for too long. Garlic powder will also help remove the smell!

  3. After frying, transfer to a small bowl and break it up, add black pepper, bread flour, mayonnaise, and eggs and mix well

  4. I forgot to take pictures at this step, alas. Just make it into a patty shape, fry it in a pan over medium heat until the bottom is colored and the edges are golden. Then put it on the plate. Peel the cucumbers at intervals and cut them into thick slices for the base. Boil the bean sprouts and place them on the cake. Garnish with hot sauce.
