Buckwheat heads are a specialty of Jiangxi. They mainly help digestion and increase appetite. They taste crunchy, spicy and delicious, and go very well with meals. Two kinds of peppers are used for pickling because the beauty pepper is juicy and the color of the pickled buckwheat is better.

  1. Peel the buckwheat heads and cut off both ends. Wash all the peppers, garlic and ginger and drain the water. I cleaned and washed them the night before because there should be no water or oil during the pickling process.

  2. Prepare the drained buckwheat heads and ingredients. Remove the seeds from the beauty pepper and chop it into pieces. Clap the garlic and chop into pieces. Cut the ginger into thin strips. Chop the millet pepper without removing the seeds.

  3. Finally, put them all together and add salt. Add more salt, otherwise it will not taste good. Mix well, put it into cans and put it in the refrigerator. There should be no water or oil in the cans. You can eat it after at least half a month.
