Overview

The recipe comes from rice leaves and is made with soy sauce, sesame seeds, and five-spice powder. It definitely has a strong taste, but it’s actually quite delicious! I used the Xuechu Mold!

  1. Sift the low-gluten flour and baking powder together twice, beat the eggs slightly, do not beat them, then mix the eggs and flour together and stir gently evenly.

  2. Add cooking oil and mix carefully.

  3. Add light soy sauce, honey, black pepper, allspice and sesame seeds, and mix thoroughly with the batter. Be gentle and do not over mix.

  4. Cover the batter and refrigerate for more than 1 hour.

  5. .Preheat the oven to 210 degrees, put the batter into the madeleine molds and sprinkle sesame seeds on the surface until it is eighty or nine full, and let it rest for 15 minutes.

  6. Place in the middle rack of the oven and bake at 210 degrees for 4 minutes, then lower the temperature to 180 degrees and bake for another 8 minutes.
