Vegetarian fried rice noodles

Dry rice noodles are ready

Put the dry rice noodles directly into the cold water pot

Bring to a boil over high heat and cook for 8 minutes, stirring constantly with chopsticks to prevent sticking to the pan,

Turn off the heat, cover and simmer for 15 minutes

Vegetables are ready

shred cabbage

Shred carrots

Shred cucumber

Chop onion, ginger and garlic into mince

Soak the rice noodles in cold water several times

Drain the water and set aside

Add oil to the wok and sauté the green onions until fragrant

Add the shredded cabbage and carrots to the pan and stir-fry for two minutes

Add salt and soy sauce and continue to stir-fry

Pour in shredded cucumber and minced ginger, stir-fry until the vegetable juice comes out

Put the drained rice noodles into the pot

Sprinkle with minced garlic

Mix vegetables and rice noodles evenly
