When I’m overseas, I often miss the warmth of having fried eggs at home but not being able to eat them outside

Have all materials ready

Cut the scallions into sections with a diagonal knife and make them uniform in size, otherwise the scallions that are too small will burn when fried in oil

Put oil in a pan, add dried shrimps and fry until white bubbles form around the dried shrimps

Be careful to use low heat, otherwise it will taste bitter

While simmering the scallion oil, boil water in a pot. When the water is boiling, add green vegetables when the noodles are almost ready and cook

Drain the noodles and vegetables and put them into a container. Be careful not to overcook the noodles so they are chewy and delicious

Fry the onions until brown but not black

Mix the cooked scallion oil, appropriate amount of soy sauce, sesame oil, salt and white pepper into the noodles

Note that soy sauce itself has a salty taste, so don’t add too much salt

Add a fried egg and enjoy
