Prepare materials
-
Beat the egg yolks with 25 grams of sugar and stir evenly
-
Mix milk and corn oil and stir well, pour into egg yolk and mix well
-
Add the sifted flour to the egg yolks in two batches and mix well
-
The egg whites should be water-free, oil-free and egg yolk-free. After beating into a rough foam, add a few drops of white vinegar or lemon juice. Use an electric egg beater to beat the egg whites in three steps at low, medium and low speeds. Add sugar in three steps, and finally beat them into short and sharp peaks (dry whipping)
-
First add one-third of the egg whites into the egg yolk batter and mix evenly, then add the remaining egg whites and mix evenly
-
Remember, do not stir in circles, stir like stir-fry, and do not stir for too long,
-
Stir evenly until the egg yolk paste is no longer yellow
-
Coat the inner layer of 6 cups with melted butter (to facilitate unmoulding), then pour the cake batter into it, and tap it a few times to knock out the bubbles,
-
Preheat the oven to 135 degrees, put it in the second to last rack of the oven and bake for 35 minutes, then raise the temperature to 150 degrees and bake for about 20 minutes
