Put the pork skin in a pot under cold water, add onion, ginger and white wine, and bring to a boil over high heat.

Add cold water again, add the cut pork skin, green onion, ginger, star anise and white wine. Bring to a boil over high heat and cook for 30 minutes until the pork skin becomes soft and glutinous and the soup becomes white and thick.

Remove the spices, pour the remaining pork skin and soup into a container while hot, and let cool naturally.
