Fresh pickled lettuce
Overview
This dish has a different taste and texture than the usual lettuce. It has the crispness of mustard but not as salty as mustard. It tastes great when mixed with coriander and sesame oil, and is particularly refreshing.

Prepare materials.

Peel the skin off the lettuce.

Slice the lettuce into 1 cm thick slices.

Marinate the cut lettuce with salt and stir once for half an hour. (Put a little more salt)

Use your hands to grab it back and forth to squeeze out more water.

After the lettuce becomes soft, wrap it in gauze and squeeze out the water.

After squeezing out the water, press it with a heavy object on the gauze bag for 10 hours.

The pressed lettuce is now mustard.

Cut cilantro into sections and set aside.

Take a bowl of sauce, stir in sesame oil, minced garlic, chili oil, salt and sugar.

Add the bowl of juice to the pressed lettuce and stir evenly.

Finally add the coriander and stir.
