Rice dumplings with bacon and grains
Overview
In the past, every Dragon Boat Festival, the adults at home would be busy making rice dumplings and boiling red eggs! Now that I am a mother, I will make rice dumplings for my family to eat this year! Because it was my first time to make rice dumplings, I even called my parents for advice!

After washing the rice dumpling leaves, boil water in a pot. After the water boils, turn off the heat and put the rice dumpling leaves into the pot to soak overnight.

Soak red beans, mung beans, peanuts, and shiitake mushrooms in a bowl and set aside

Cut the pork belly into pieces, add cooking wine, soy sauce and salt and cook for half an hour and set aside

Wash the rice dumplings and soak them for ten minutes, drain the water and set aside

Cut the mushrooms into pieces and pour the soaked red beans, mung beans and peanuts into the basin containing rice dumplings

Add the alkali powder together and stir evenly (the preparations have been done, now let’s start making rice dumplings)

Take two rice dumpling leaves (if the rice dumpling leaf is very large, you can use only one) and fold it in half to form a funnel shape

Grab a handful of rice and put it into the rice dumpling leaves, as long as half of it is enough. Then put a piece of soaked pork belly and shiitake mushrooms, and finally grab a handful of rice to cover it

Tighten the rice dumpling leaves to cover the opening, and finally tie it tightly with a rope (I did it by myself, so I didn’t take a picture of the closing method. I will teach you next time)

Put the wrapped rice dumplings into the electric pressure cooker, add water, the water should basically cover the rice dumplings, adjust the time, 40-60 minutes

When the time is up, open the pot and a aroma of rice dumplings will come over
