Wash the pork belly and cut into pieces.

Put water, a few peppercorns and cooking wine (not included in the recipe) into the pot, add pork cubes and blanch until the water boils.

Remove from warm water, rinse and drain.

Soak the vermicelli until soft and cut into sections.

Cut green onions into sections and slice ginger.

Put a little oil in the pot, add rock sugar and stir-fry over low heat until brown-red, add pork belly pieces and stir-fry quickly.

Stir-fry until the color changes and oil appears. Add the green onions, ginger slices, star anise and cinnamon and continue to stir-fry until the aroma becomes fragrant. Pour in the cooking wine and stir-fry until the water vapor disappears.

Add hot water until the meat is covered, add light soy sauce and dark soy sauce, cover and bring to a boil over high heat, then turn to low heat and simmer for half an hour.

Remove the green onions and ginger slices from the pot and continue to simmer covered for about 20 minutes.

When about 1/3 of the soup is left in the pot, add vermicelli and an appropriate amount of salt and cook over low heat for about 8 minutes.

Cook until the vermicelli softens and the soup thickens.
