Coconut Purple Sweet Potato Milk Sago Dew

As a summer dessert to cool down, I love the faint purple color of purple sweet potatoes!

Wash, peel and cut purple sweet potatoes into small pieces

Boil the purple sweet potatoes in water until soft, drain and set aside.

Pour enough water into a deep pot, bring to a boil and add sago.

While cooking over medium heat, stir constantly to prevent sticking to the bottom. When the white spots in the middle of the sago become very small, turn off the heat. Preheat the pot and cook the sago until all the sago becomes transparent

Pour away the water used to cook the sago, add cold water and rinse continuously until it cools down. Drain off excess water and set the sago aside for later use.

Clean a deep pot, pour in milk and coconut milk, mix and heat.

Finally, add cooked sago and purple sweet potato cubes. When tasting, you can add a scoop of vanilla ice cream to increase the sweetness.
