Overview

The puff tower is a traditional French celebration dessert. The puffs that symbolize happiness are accumulated one by one. The tall puff tower is people's longing for full happiness.

  1. Cut the softened butter into small cubes.

  2. Pour the sifted cake flour and powdered sugar into the bowl.

  5. Knead into a smooth dough, cover with plastic wrap and refrigerate for 1 hour.

  6. Take out the refrigerated dough and roll it into a round dough.

  7. Place the rolled dough into a 6-inch pie mold.

  8. Scrape off excess dough and use a fork (or toothpick) to make holes in the dough.

  9. Cover with parchment paper (or tin foil) and add cereal or baking stone.

  10. Place in the preheated oven at 180 degrees for 20 minutes. After 20 minutes, remove the oil paper and grains. Bake for another 8 minutes. It came out of the oven, but it got cold on the drying rack.

  11. Make puff bodies: Pour milk, sugar, salt and butter into a small pot and bring to a boil.

  16. Beat 350g whipping cream + 15g sugar and put it into a piping bag for later use.

  18. Then squeeze it into the cool tart tower. Arrange the puffs and dip them in cream and place them on the tart tart.

  19. Dip each layer of puffs with cream and add them one layer at a time. The cream can be dipped in small cherries, blueberries, small leaves (or mint flavor).

  20. Make caramel: Boil sugar and water until caramelized. Use a fork to pick it up until it becomes stringy.

  21. Go directly around the puff tower a few times. If the caramel dries out halfway through, you can heat it over low heat and continue wrapping. The beautiful puff tower is finished!
