Chestnut, Red Date and Tremella Soup
Overview
In chestnut season, you can’t miss out on all kinds of delicacies made with chestnuts. Chestnut soup is also sweet and delicious. Coupled with its extremely high nutritional value, and paired with some complementary ingredients, the soup will be delicious and nutritious. Today I chose glutinous ear and red dates as ingredients. This kind of white fungus becomes glutinous as soon as it is boiled. It is easy to make soup. It does not take too much time to make a pot of thick and sweet soup.

Steps
-
This time I used glutinous ear, also called ugly ear. This kind of white fungus is easier to cook into glutinous rice. Wash it with water
-
Soak in cold water an hour in advance. The soaked white fungus can be seen to be much bigger.
-
Remove the roots of Tremella fungus, tear it into small pieces, put it into a soup pot, and add about 2.5L of water
-
Bring to a boil over high heat, peel off the chestnut skin, clean the red dates, add the red dates and chestnuts after the water boils.
-
Bring to a boil over high heat and then turn to low heat. In about 7 or 8 minutes, the white fungus will become very soft and waxy. But the soup is not thick yet
-
Continue to cook on low heat for about 15 minutes, until the soup becomes thicker.
