  4. Cover with a wet cage cloth. If you don't have a cage cloth, you can use a pot lid or a bowl. Let it cook for fifteen minutes. If the weather is hot, ten minutes will be enough. If the weather is cool, it will take twenty to thirty minutes.

Put boiling water in the pot, put in the pulled noodles and vegetables, take them out after cooking, the noodles will be strong after adding salt, and you can pull them into strips with a little force. If the thickness is uneven, pull it out a little more. The noodles are still very chewy even after being cooked in the pot for a long time

  9. Remove the noodles and vegetables and add salt, MSG, chopped green onion, Sichuan pepper powder, chili noodles, soy sauce and vinegar, then pour hot oil and stir well. Put the salt and MSG aside. Don't let the hot oil pour on it. Use a little Sichuan peppercorn powder to enhance the flavor. Put the chili noodles first and sprinkle them. Finally, add the chopped green onions and sprinkle them. Pour a little vinegar and just a little bit of soy sauce. If there is too much, the noodles will turn black. Keep the soy sauce and vinegar aside. Don't pour it on the chili noodles and green onions. Otherwise, the oil will splash when you pour hot oil on them. After pouring hot oil on it, the onions are cooked and the spicy noodles are not mushy. I used spicy noodles that I ground with Chaotian pepper, so just a little bit is very spicy.
