Wash the catfish, wipe it clean with kitchen paper, and chop the catfish into pieces (you can also slice it into pieces, I think the pieces have more flavor)

Prepare spices and seasonings, mince garlic and ginger and set aside

Mix light soy sauce, salt, cumin powder, black pepper powder, spices, etc. together, rub it on the fish, on both sides, and then marinate it for 8 hours to get the flavor; (because the thicker catfish meat, the longer it tastes better)

Take the marinated catfish out of the refrigerator and stir to infuse the flavor into every side of the fish

Place tin foil on a baking sheet and brush a small amount of oil on the tin foil to prevent the catfish from sticking to the tin foil

Spread the catfish meat evenly on a baking sheet lined with tin foil, sprinkle with cumin powder and Italian spices and cover with a layer of tin foil

Preheat the oven to 250 degrees, place the fish meat side up and bake on the top layer for 10 minutes.

After 10 minutes, take out the baking sheet, uncover the tin foil, turn the fish over and sprinkle some mixed seasoning powder on it. Place on the middle layer and bake at 250 degrees for 10 minutes. (No need to cover with tin foil this time) Remember to use kitchen paper to absorb the water after turning it over. The fish baked in this way is dry and does not feel slimy.
